The Best Chocolate Chip Cookies

We had a busy weekend. I don't even remember everything we did, but it included about 467 mosquito bites for the 4 of us, a last-minute pool party for my father-in-law's birthday on Sunday, and lots of lounging around and laundry. Also sometime yesterday, I made chocolate chip cookies. Back in February, I got the recipe off of Heidi Swapp's blog. My best friend in the world came to visit shortly thereafter, so we made them together (like old times... remember those Toll House crops, Lulu?). Homemade are MUCH better.

Here is the recipe:

Pre-heat to 350
  • 1 cup brown sugar (be sure it’s fresh. NO CLUMPS. Very important. Packed)
  • ½ cup granulated sugar
  • 1 cup shortening

Combine that and mix until it’s nice and fluffy. Then, add in

  • 2 eggs
  • 1 t. vanilla

Mix again until it’s really fluffy. Like 2 minutes. Then add

  • 2 cups flour
  • 1 t. salt
  • 1 t. baking soda

Mix until it’s all combined, use a spatula to push down all the extra flour etc… don’t over mix this part…then add in as many choc. chips as you feel comfortable. I use 1 3/4 Cup.

Keep the cookie size small… like 2” ball on sprayed cookie sheets. Bake for 11-13 minutes and then remove from the oven and immediately transfer to a cooling rack.

They are DELICIOUS!!!
