Chocolate Orange Drops
1/2 C. shortening (butter Crisco is perfect)
3 oz. cream cheese
1/2 C. sugar
1 tsp. grated orange rind
1 tsp. vanilla
1 C. flour
1/2 tsp. salt
6 oz. (about 3/4 C.) semi-sweet chocolate chips
Heat oven to 350 degrees. In one bowl, mix shortening, cream cheese, sugar, egg, orange rind, and vanilla; blend thoroughly. In a second bowl, add flour and salt; stir thoroughly. Blend dry mixture into wet mixture until combined. Stir in chocolate chips.
Drop dough by teaspoonfuls about 1" apart on lightly greased baking sheet. Bake about 15 minutes, or until edges are delicately browned.
Makes about 3 dozen cookies.
Note: These cookies do not get brown. At all. When my aunt Barb says "delicately browned", Man, she means it. They remain blonde, but you can watch for the tops to begin to crack when they're done. They are also quite tiny, so if you have a big gathering you'll need to double the recipe. I love them.
